Sometimes when you feel like having a lazy day away from the avacado’s and poached eggs all you really want is just a really good juicy cheeseburger! I mean don’t get me wrong I eat well but there are times when you just fancy a burger, especially at a weekend for some reason. Plus, when I go out to eat they always look so good but your gluten free option is in lettuce or a gf bun and neither are what you really want on one of these days.
I’ve been developing this recipe Cheeseburger Bake in my head for the past week, working out how realistic a taste it could be. Today I baked it and it is, that cheeseburger flavour I was looking for was there, without the lettuce or the crumbly bread!
Serves 2 Cooking Time: Around 40 mins
500g of minced beef
2 medium sized potatoes finely sliced
1 large tomato sliced
½ red onion sliced
Dairy Free cheese sliced or Dairy free cheese slices
Thinly sliced pickled gherkins (pickled gherkins recipe)
For the Sauce…
125g dairy free natural yoghurt
2 tbsp dairy free mayo
1 tbsp of rapeseed oil
½ clove of garlic finely chopped
1 tsp basil
1 tsp mint
½ tsp chilli flakes
pinch of salt
1) Brown the mince in a pan at a high temperature and in another pot par cook the thinly sliced potatoes for just a few minutes.
2) While that’s happening take all the ingredients for the sauce and mix together, then set aside.
3) In an oven dish we’re doing layers like a cheeseburger! cover the bottom with the par cooked potatoes, then your mince, then your cheese, then tomato, then red onion and gherkins. Pour the mayo sauce over the top and then cover the dish with another layer of potatoes.
4) Brush the top of the potatoes with some coconut oil and bake in the oven at 170º for about 35 mins, check that its hot right through.
That’s it done and it genuinely tastes like an amazing cheeseburger! Happy times x
