On a cold, cold day there is nothing better than just a bowl of these Cheesy Chipotle Fries with some ketchup (ketchup is my guilty food pleasure!). They have that smoky chipotle warmth that’s so badly needed today and who doesn’t love chips and cheese! or is that just a Scottish thing! Who knows but trust me you need these in your life.
This time because I’ve cut the potatoes into skinny chips I haven’t par boiled them first, they’re 30 mins in the oven which gives them just the right amount of crisp and the good thing is that you can prep these cheesy chipotle fries then shove them in the oven and get on with other things until they’re ready. Always handy.
Serves: 2 Cooking Time: 33 mins
2 large potatoes
50g of grated dairy free mozzarella cheese (I like violife)
2 tsp of chipotle flakes
Pinch of pink salt
1 tbsp melted coconut oil
1) Cut the potatoes into skinny chips then sit in a bowl of cold water for 5-10 mins. Drain then put them back in the bowl and mix through the chipotle flakes, salt and melted coconut oil.
2) Place the fries evenly across the baking tray and place in a pre heated oven at 190º. Cook for 30 mins turning them over half way through.
3) After 30 mins take them out spread your grated cheese across them and pop them back in the oven for about 3 mins until the cheese has melted over.
