So I finally got around to making myself some gluten free and dairy free banana pancakes today. I’ve been craving them for the last week, thing is I forget how quick and easy they actually are to make. They’re great for breakfast, great for a lunch and the left over ones are great for a late evening snack like what has just happened here!
1 Cup (16 tbsp’s) of GF Oats
1 Cup of Coconut Milk
1 tsp Vanilla Essence
1 tsp Xanthan Gum
1 tsp Baking Powder
2 tsp Coconut Sugar
DF Dark Chocolate
1) Put all the ingredients except the chocolate in a blender and whizz. Your batter is then ready.
2) Put your frying pan on a medium heat and melt some DF butter. Pour some of the mixture into the pan spreading evenly.
3) When the Pancake is cooked on the one side then flip and melt one square of chocolate (or more if you want them really chocolatey)on the top side of the pancake while its still cooking underneath. Just keep repeating until all the batter is used. Yum!
I also like to sprinkle some ground almonds across the top of them as an extra sometimes.
