This Garlic, Basil & Tomato Pasta is a bit of a using up what’s in the fridge recipe for me and just wanting to make something really quick for dinner. There’s nothing worse than spending the whole journey home thinking what do I actually have to eat when I get in, but there’s always something that can be done. Plus I always make sure I have plenty fresh produce because I think as a coeliac it’s important to make sure we know what we’re eating and and getting plenty nutrition when our immune system is already weakened.
Garlic, Basil & Tomato Pasta Ingredients…
5 large Tomatoes
2 Garlic Cloves
2 tbsp Basil leaves
2 tsp coconut sugar
1 tbsp parsley leaves
1 tsp tomato purée
Pinch of chilli flakes
Enough GF pasta to serve
Half a yellow pepper sliced into chunks
3 large chard leaves shredded
Half a cup of broccoli florets
1/4 cup of grated DF cheese
1) Start by getting the pasta on hob, check the cooking time as different gf pastas vary.
2) Whizz together all the sauce ingredients in the blender and set aside for now
3) Steam the chard, pepper and brocolli until tender, about 4-5 minutes.
4) When the pasta is ready drain and then put back in the pan on the the hob on a low to medium heatand stir in the sauce, then the steamed veg and finally the grated cheese stirring through until melted in. Done and ready to serve up.
