Gluten free scones aren’t something I have tried before, in fact I don’t think I have even seen gluten free scones out and about so this was a treat when I gave them a go for the first time the other week. What can be better in the summer than fresh strawberry jam and cream on gluten free scones! When I say cream I of course mean dairy free cream for me, I had some Coyo natural yoghurt in the fridge so used that as my cream alternative. It worked because it’s thick and didn’t run of the scone, who wants a drippy scone.
What has surprised me the most is that they are surprising easy to make. I always had it in my head it would be a bit of a faff but it really wasn’t and not that many ingredients. This was also the first time I’d used a gluten free flour I picked up at the Free From Festival, Alevra plain flour which is a mix of tapioca, rice, potato, maize and sorghum flours. Definitely a flour I will be using in my future bakes as I never had any problems like you sometimes get when baking something new for the first time gluten free, turned out exactly like any gluten version.
Jam and cream, cream and jam, that’s up to you. I’m Scottish so we just eat whatever way around!
