Over the past few months I’ve found gluten free fresh pasta in different shops, like this gluten free tagliatelle I’ve used to make this dish. The first gluten free tagliatelle was found by mum when she was having a look in the free from section in the Coop. I got a phone call to tell me and it was sitting waiting for me to use the next time I went home for a visit! It was a great choice and I would totally recommend it if your local store has it, I’ve used it quite often now. My absolute favorite though is from gluten free restaurant Leggero which is based in Soho, London. If you’re in London or visiting then Leggero is a coeliac must but it’s also well worth visiting there Leggero Lab at Mercato Metropolitano. It’s situated between Borough Market and Elephant and Castle and that’s where you’ll find there fresh pasta for sale.
When I made this last night I used Leggero’s basil tagliatelle however I’ve also made it before using either plain fresh or dried tagliatelle and it’s still as tasty with the roasted vegetables mixed through and dairy free mozzarella sprinkled across the top. Give it a go for a quick and super easy meal.
Gluten Free Tagliatelle With Roasted Vegetables
- Enough gluten free tagliatelle for 2 ((around 75g each))
- 2 tbsp Mixed black and green olives
- 1/2 Green Chilli, sliced
- 1 Yellow pepper, diced
- Handful of plum tomatoes, sliced in half ((around 25g))
- 1/2 Aubergine, diced
- 1/4 red onion, diced
- A few fresh basil leaves, finely chopped
- splash of gluten free vinegar, I use rice vinegar ( )
- Small cube of dairy free mozarella, grated
Pre heat your oven at 200ºC (fan)/Gas 6. In a roasting dish add all your veg plus basil and drizzle a little rapeseed oil over the top with a splash of vinegar. Pop in the oven for 20 mins
Check the cooking time for your tagliatelle, if it’s fresh pasta then you should only need to put it into boiling water for 2-3 mins and it’s ready. Dried gluten free tagliatelle will take longer.
Drain the pasta and then mix through the roasted veg, grating a small cube of dairy free mozzarella over the top.
