I’m full of the cold since sitting next to an uber driver, I know it’s my own fault I should never have got an uber but I was lured back in by the easiness! Anyway I made this Kale & Spinach soup packed full of all the things that should help.
Plenty of vitamins from the kale and spinach plus garlic, lemon and thyme that are good cold remedies. Of course you don’t need to make it just as a cure, it’s pretty good anytime with it’s zesty flavour.
60g of Spinach
60g of Kale
2 cloves of garlic
4 twigs of thyme
1 tbsp fresh lemon juice
¼ red onion
½ tbsp coconut oil
1 tsp coriander
Pinch of pink salt
Pinch of pepper
1 GF stock cube
500ml of water
2 tbsp dairy free natural yoghurt (I like to use Coyo)
1) Put your large pot on a medium heat, add the coconut oil then garlic and red onion and saute them for about 2 mins.
2) Make up the stock cube with 500ml of boiling water (check instructions on stock cube in case different brand to mine)
3) Add all the ingredients except the natural yoghurt to the pot and top up with water. Then simmer for around 30 mins until veg is soft.
4) Remove your thyme twigs then blend it until it’s smooth. Finally add in the natural yoghurt and stir through. That’s it ready to eat or keep.
