Today is World Pasta Day!! What a day!! Since seeing this hashtag on twitter this morning I now feel obliged to have pasta for dinner, but what pasta dish can you make with a midweek fridge?! Well I’ve somehow conjured up this and it’s pretty tasty.
I know some people are a but dubious about gluten free pasta but there’s so many different choices out there now that you can get some that are no different to ‘normal’ pasta in my opinion. I don’t know why people are quick to be so dismissive, it’s probably a case of they just assume it won’t be the same but the truth is that if they ate it and didn’t know then they wouldn’t think any different. Personally my faves are Waitrose or Doves Farm, they cook quick and well, plus they don’t leave a lot of residue starch.
Anyway below is my made up recipe for my yummy pasta day dinner. Enjoy!
Serves 2 Prep & Cook Time: 20 mins
Around 200g of GF Pasta
1 tbsp rice syrup
1 Diced chicken breast
1 Sliced Chorizo
1/2 a Green Chilli diced
1/2 a Lemon
4 Spring Onions chopped
1/2 a courgette sliced
1/2 Yellow pepper diced
About a tbsp of fresh basil and the same parsley
Handful of Kale
Handful of Rocket
1) Firstly put your diced chicken in a dish and drizzle a tbsp of rice syrup over it. heat up your pan on the hob at a medium heat with a touch of rapeseed oil.
2) Put your pasta on the hob and start cooking it (usually takes around 10 mins)
3) Now that’s done and your pan will have heated up add the chicken, let it cook for around 4-5 mins then add the chorizo, spring onions, pepper and courgettes with the chili and a 1/4 slice of the lemon squeezed in. Mix through and cook for another 3-4 mins before adding the kale, rocket, basil and parsley.
4) Take the pasta and drain, then add into the pan along wth the chicken etc, turn down the heat and mix through for about 1 min. drizzle another 1/4 slice of lemon over the top and serve.
