I made this dreamy banana loaf this morning, adding some mixed ground spice to give it a lovely warm nip. I find gluten free loafs are something that can be so hit or miss as to how they turn out but this is the best result I think I’ve had, it was a good consistency and baked well without the worry of looking in the oven and thinking ‘oh no my loaf is not rising’!!! Also when it comes to banana loaf, making sure the bananas are really ripe definitely makes a big difference.
Of course it’s gluten free and dairy free as always plus it’s low sugar as the banana’s work as a natural sweetener.

4 Ripe bananas
250g of gluten free self raising flour
120g of coconut sugar
75g of dairy free butter, melted
2 large eggs
1 tbsp of ground mixed spice
1) Pre heat your oven to 160º for a fan oven and line a loaf tin with greaseproof paper. Crack the 2 eggs into a small bowl or cup, whisk then set aside.
2) In a large bowl mash the bananas until smooth and wet, then add the sugar, eggs and melted butter. Beat together using either your wooden spoon or electric mixer.
3) Gently fold in the flour and mixed spice.
4) Pour the mixture into your loaf tin and bake in the oven at 160º for 1 hour. Your skewer should come out clean if inserted in the middle, you will also know as it will spring back up if you gently press the middle.
Let it cool down before slicing although it is lovely warm so for your first slice you might not want to let it cool too much!
