So winter has hit again and even though it looks nice out the window it really is freezing cold! This gluten free and dairy free soup will definitely warm you up if thats the case with you too and there really is nothing like a nice bowl of soup on days like these.
It’s easy to make, do it in the morning and have it ready for lunch, in fact it’s a good soup to meal prep with. Make it on a Sunday and you have lunch ready for the next few days plus as with most soups it freezes really well. You really can’t resist it’s vibrant colour and spicy nip!
1kg of skinless tomatoes
2 large onions, diced
1 tbsp of gluten free and dairy free tomato purée
2 garlic cloves, diced
1 fresh chilli, diced or 1 tsp of chilli flakes
1 gluten free vegetable stock cube
1) Dissolve the stock cube in 1/2 litre of water.
2) Chop the tomatoes and onions and add to the stock, then bring to the boil and simmer 15 minutes.
3) Add purée, garlic and chilli (chopped if fresh) and simmer for a further 10minutes.
4) Blitz with blender until smooth, add a pinch of salt and pepper then your done and ready be warmed!
Easy as anything and quick to make for a good gluten free and dairy free lunch time.
