This gluten free soup is very green but it is also very good! I love kale, can’t get enough of it. Crispy and salty, with a touch of chilli or even just steamed and added to any dish, I just love it!
However I have too much of it in my fridge just now Ive decided to make some soup to use it up plus our hot weekend is over and the storm has been a brewing so it’s definitely soup time of year.
Very Green Gluten Free Soup Ingredients…
1 GF vegetable stock cube
200g runner beans
1 large onion
4 large kale leaves
2 Garlic cloves finely chopped
1) Chop all veg and put in pot with 400ml water and the stock cube.
2) Add the garlic and boil for 25 mins or until all the veg is soft.
3) Blend to make smooth, then add black pepper to taste.
Easy and quick!
