This thick, hearty Yellow Split Pea Soup is just what you need on the cold days just now. Gluten free and dairy free it’s easy to make and great for when you have a group of friends or family round for lunch. Alternatively it freezes well, so half it and have some today and the rest on another day when you need a bit of comfort.
2 Gluten free vegetable stock cubes
250g Yellow Split peas
1 Small turnip diced
4 Large carrots diced
1 Leek diced
1 Onion diced
2 Large kale leaves shredded
1) Put the vegetable stock cubes and split peas in 1 litre of water and bring to the boil.
2) Add the rest of chopped veg and simmer for approx 1 hour. Add a pinch of pink salt and some pepper to taste.
That’s it done, so easy to make and have a big pot of sitting ready when you need it! We like it left with the chunky vegetable through it but if you prefer it smooth then just blend it down, it will still provide you with all the warmth you need.
